AI for Business Consultancy

Good morning folks, I am doing some research on the impact of AI on business consultancy. I want to initially try out existing models to first learn how to improve my datasets before diving into building my own model.

I'm specifically looking for ideas about parameters or metrics that I should be covering for a small cafe business. Since I'm coming from a CS background, my knowledge of the restaurant/cafe industry is pretty limited, so I thought I'd reach out to this community for some guidance.

What kind of parameters should I be considering besides the obvious ones like customer and sale data, Inventory information, etc. Pricing strategy analysis? I'm really open to any suggestions!

I appreciate any help or direction you all could provide. Just trying to get my bearings in this space before going too deep down any particular path.
